Black Bean Salsa

Ingredients:
2 15 oz cans black beans, drained and rinsed
1 17 oz can corn, drained
2 large tomatoes, chopped
1 medium purple onion, chopped
¼ cup cilantro, chopped
4 Tbsp lime juice
1 Tbsp olive oil
1 Tbsp red wine vinegar
1 tsp salt
½ tsp pepper
1 large avocado, peeled and chopped (optional)

Directions:
1. Marinate ingredients overnight, except avocado
2. Add chopped avocado before serving

 

Serving Ideas:
Serve with backed chips or sliced celery sticks
Make this your own recipe by adding as much or as little of the ingredients as you wish.
