Turkey
Enchiladas
Ingredients:
1 lb extra lean ground turkey
1 small can of chopped green chiles
½ cup onion, chopped
10 low fat corn or wheat tortillas
1 can enchilada sauce
Low fat shredded cheese (Mexican flavor) |

Directions:
1. Spray pan with Pam cooking spray. Heat skillet over medium-high
heat.
2. Brown turkey in skillet.
3. Add green chiles and chopped onion. Cook for ~2 minutes.
4. Pour in enchilada sauce (1/2 the can, set other ½ aside).
5. Cover cookie sheet with foil and spray with Pam.
6. Place tortillas on cookie sheet and add ground turkey mixture.
7. Sprinkle cheese over turkey mixture and roll up tortilla.
8. Sprinkle cheese on top of rolled tortilla and add enchilada sauce
as preferred.
9. Set oven on broil and cook for 3-5 minutes or until slightly
browned and crisp.
Keep oven door slightly open.

Serving
ideas
Serve enchilada with fat free refried beans.
Add side salad or some fruit for a more balanced & complete
meal.
Add chopped tomatoes, chives, and avocado to top of enchilada for
more nutrition.
